Donkey milk’s virtues are known since ancient times.

PRODUCTION OF DONKEY MILK

Donkey milk is a precious ingredient.

Donkey milk production begins with the birth of the foal but, it is necessary to wait a period of two months before milking the jenny. It will then be possible to get milk until the weaning of the little one, which will occur approximately between 8 and 12 months.

The quantity of milk a donkey produces is unsteady and different from one animal to the other and from one day to another.

Milking is done manually and requires patience and a delicate touch. The jenny possesses only two small teats.

Fresh donkey milk is fragile and can only be preserved for a maximum of 48 hours; it can be frozen for longer preservation.
